Quantity Cookery is a specialized subject that deals with the preparation, cooking, and service of food in large quantities for commercial and institutional settings such as restaurants, hotels, cafeterias, catering services, hospitals, schools, and food establishments. The subject provides students with knowledge and practical skills in large-scale food production, menu planning, recipe standardization, portion control, food costing, purchasing, storage, and kitchen management.

It also emphasizes the proper use of kitchen tools and equipment, workplace safety, sanitation, hygiene, and efficient workflow in food preparation areas. Students will learn techniques in preparing appetizers, soups, main courses, desserts, and beverages while maintaining food quality, nutritional value, consistency, and customer satisfaction.

The course develops students’ competence in teamwork, time management, and productivity in a professional kitchen environment. It also prepares learners for careers in the food service industry by applying culinary principles, cost-efficient practices, and industry standards in quantity food production and service operations.
